Listening to Vantage Master Japan's OST now, although I've been listening to Dream Theater's TIMELESS CLASSIC Images & Words during studying for my math exam. Goodness!

Been listening to a lot of Italian prog rock lately, like Il Baricentro, a wicked instrumental band, with a nice funk to their songs, and Apoteosi, a sorta psych rock group based around two bros and a sister (she does vocals). The keyboard work is great, and was apparently done by but a 14 year old! There is some great Ayreon-esque moments, although this is way older than Ayreon.
Of note is the great emotional piano/flute and very good exploration of melodies.
